GREAT FALLS - The Celtic Cowboy Pub & Restaurant at 116 1st Avenue South in Great Falls opened on Friday.
The opening of the Irish-themed eatery was delayed for several weeks as the owners waited for custom mill working, including the bar, waitress stools, and other items from Calgary and Ireland.
Managing partner Wayne Thares said, "I'll tell you, it's been a long road. We really thought this thing through for the last two years. We've been working on it for a long time. We have a great staff and a great crew that really worked with us, and now we are here."
The "Celtic Cowboy" moniker stemmed from a nickname given to Robert Vaughn, a rancher from Wales, who was a close friend of Paris Gibson, the founder of Great Falls.
The restaurant features Irish food and a band stage on the main floor, and will soon open a wine bar and unique conference rooms downstairs.
