GREAT FALLS — A restaurant named after Great Falls' founding father Paris Gibson is set to officially open on Friday, September 11, in the space formerly occupied by Beef O'Brady's on the southwest side of town.

Owner Brett Haverlandt told MTN News that spot has undergone recent changes, including a sign with the new name: P. Gibson's Sports Grill & Casino.

Haverlandt said that they dropped the Beef O'Brady's franchise recently and are focused on being locally-owned and branded.

The website states: "We hope to encapsulate history through our restaurants design as well as our food and drink offerings. We've hand-selected different Montana inspired foods and vendors to give you the Montana dining experience. From our Huckleberry BBQ Burger to our Flathead Cherry Mule as well as local brewers, there is something on our menu for everyone."

From the Facebook page:

  • Bar:Sunday - Thursday 11 AM - 11 PM; Friday & Saturday 11 AM - 12 AM
  • Restaurant:Sunday - Thursday 11 AM - 11 PM; Friday & Saturday 11 AM - 12 AM
  • Casino: 10 AM - 12 AM Everyday

Before it became Beef O'Brady's, the location was a Baja Fresh & Canyon Burgers restaurant; prior to that, it was Monty's A Taste Of The West for several months. And before that, it was Elmer's restaurant for many years.

In related news, Hokkaido Ramen & Sushi Bar officially opened last week in Great Falls. The new restaurant is in the Great Falls Marketplace in the space formerly occupied by Pizza Hut, right next to Cold Stone Creamery.

And one other recent opening to announce: True Brew opened its second location in Great Falls, located at 1801 11th Avenue South, last month. The first True Brew remains open at the corner of Central Avenue and 9th Street.
