GREAT FALLS — Coffee truck Mighty Mo Cup O’ Joe returned to Great Falls after closing down due to COVID-19 for a few months last week - bringing with it a new summertime sweet.

Now, in addition to brewing coffees, Mighty Mo Cup O’ Joe will be packing snow cones this summer.

Owner M’Lynda Elliott saw the success of snow cone stands while attending her son’s baseball competitions, and was inspired to try out her own. “They always have really long lines...so I thought for his baseball tournament in July, I thought it would be a great thing to add because I sell coffee at that tournament,” Elliott said.

The decision comes after a few-month hiatus, in which she was able to come up with solutions to make up for lost business. “There was a while there that stores were limiting the amount of milk you could buy. And I thought, you know what, it’s probably just a good time to kind of resettle and rethink,” Elliott said, “Before covid happened, I was doing really well, because I was delivery-based, and then I had to shut down for a couple months.”

Elliott hopes the high demand and low competition for snow cones will help her make up for lost business during the past few months. “I just thought this would be a good addition to try to, you know, kinda get me back going again,” Elliott said.

In the week since she reopened, she’s already seen some of her regulars show their support. “A lot of my regulars came to support me...so it was really nice to see those people,” Elliott said.

To continue serving the city this summer, Elliott said the food truck needs permission to set up in various business parking lots. For more information, visit their Facebook page.
